Koosa: Middle Eastern Stuffed Squash


Last year I went to a small greek festival in San Francisco. At the event, I bought a plate stuffed middle eastern zucchini simmered in a rich tomato sauce. OMG!

This was honestly one of the best things I ate in 2019…

Last night I was on the phone with my girlfriend. our deep conversation quickly took a turn, when she brought up the stuffed zucchinis. After we got off the phone, I became obsessed and watched random Koosa making Youtube videos and read a bunch of recipes.

& all day today all I could think about were the stuffed zucchinis…

This recipe would normally yield 4, but I had already ate two servings in one sitting.

Cut the top and cut in half. Recipe Card Below.
Scoop out the zucchini with a long spoon or a thin steak knife. Recipe Card Below. 
Meat Mixture: ground meat, fresh herbs, spices & basmati rice. Recipe Card Below. 
When all zucchinis have been stuffed. Recipe Card Below 
Add a can of tomato sauce, and gill the pot with water. Cook on medium heat and simmer. Recipe Card Below.
